As an Australian 🇦🇺 I also love tinned spaghetti on toast. However I’ve always put a generous spread of butter on the toast first.
I have had the toast with the refried beans, cheese and pico de gallo many times. I never knew what it was called I just made it (my choice of bread is sourdough). I'm also from Guadalajara but I was only 7 when my family moved to the US.
If you want to elevate the spaghetti on toast it’s good to follow the cheese advice. It’s so goooooood.
Also a slice of American cheese does well too.
Hector Boiardi was making and selling canned pasta for years before the war. He was given a government contract to can rations for both the US and Russian troops, he didn't create his company to sell rations. He already had a cannery in PA, before that in OH. Most of the large food companies in the US were given contracts to make military rations, including Hershey.

Had a laugh at the spaghetti on toast. College days (waaaaay back) and very little money = one tin of alphaghetti combined with one tin of baked beans, on toast, lasted three or four days for one person, and satisfied pretty much any craving you might have – especially if you had some cheddar cheese to grate on the top of the mess. Good times….
The spaghetti toast: I always put my spaghetti on my buttered Italian bread on pasta night. I never thought to toast it. Maybe on the garlic bread. Yum.
But you didn't butter the toast before putting on the spaghetti. The butter is an actual must for the flavour. Try it again with an obscene amount of butter and you'll get it!
Red bean paste is so yummy. Mochi,stuffed with it, and rolled in coconut….amazing!
You should have put Mexico's flag instead of Spain's.

I’ve never had spaghetti on toast but I do use it to make sandwiches with French bread. Yummy.

I notice the meatballs from the can of spaghetti and meatballs, weren't used. One thing I have done with leftover meatballs is, I take a couple of canned poblano peppers, put them on an open hot dog bun, set the meatballs on top of them with shredded mozzarella, and microwave to make a meatball sandwich. Only problem is, you might then have leftover peppers from the can.
I think the toast got sad because you didnt use enough butter. Pia said that the toast was "generously" buttered. The butter sort of seals the bread so it wont get soggy.

The Mexican toast reminds me so much of a refried bean tostada. One of my fav meals. Fried corn tortilla, refried beans(pinto), cheese, and any other toppings you want.

Red bean paste kind of gives me "peanut butter and jam" vibes. Sweet and a savory, nutty earthy and sweet and jammy.
I have done alphagetti on toast with melted cheese when I was a poor student and again when I worked in India. Cheap and kept me full for hours.

Spaghetti/beans on toast is not just an Australian/New Zealand thing, it's quite popular in the UK as a quick dinner/supper especially in university/college or cafés.
Mexican McDonalds have their version of moyettes for breakfast.

it just occurred to me that outside of southwest, a lot of us Mexicans are in the north, Im originally from Queens and I only just heard of the community out in Chicago and Washington a little while back. I wonder if its the snow? maybe the pace? Idk about the other two cities but in NY, a lot of us are from Puebla, like 2 hours south of CMX and comparing NY and Puebla, I guess I can see it? like Puebla aside from having a large Indigenous population, there is an alarming number of Churches, a leftover of colonial rule. NY is incredibly Catholic, so maybe its like that? Idk this was interesting to see lol
