ON THE LAVASH TRAIL | ARMENIA
If anything identifies the Armenian cuisine, it is the traditional form of bread, called Lavash (very large oblong thin bread made entirely by hand and baked in stone or clay ovens buried in the ground).
According to folk etymology ‘Lavash’ derives its name from ‘Lav-hats’ (meaning good bread in Armenian). Experts, however, connect it with the Armenian lovaz ‘palm, flat of the hand’ and lavaz ‘very thin’, deriving from Proto-Armenian ‘lawflat’.
Lavash, the preparation, meaning and appearance of traditional bread as an expression of culture in Armenia is inscribed in 2014 on the Representative List of the Intangible Cultural Heritage of Humanity (UNESCO)
