Description

This easy, one-pan Rustic Vegan Corn Potato Sausage Skillet is packed with flavor and texture. A hearty, plant-based meal with smoky vegan sausage, crispy potatoes, and sweet corn—perfect for busy weeknights or meal prep!


  • 1 tablespoon extra virgin olive oil
  • 1 green bell pepper, chopped
  • 2 cloves garlic, finely chopped
  • 2 teaspoons freshly chopped sage (may use 1 teaspoon dried, ground sage)
  • 2 large ears fresh corn on the cob, cooked, shucked (or 2 cups frozen corn)
  • 4 medium new potatoes (i.e., red, yukon gold, purple), skin on, boiled until tender, chopped into chunks
  • 6 ounces plant-based sausage (i.e., BeyondMorningstar Farms), sliced
  • 4 green onions, diced
  • 1 1/2 teaspoons Cajun seasoning blend (or make it yourself here)


Instructions

  1. Heat olive oil in a skillet (cast iron works well) over medium-high heat.
  2. Add bell pepper, garlic, and sage. Sauté for 4 minutes.
  3. Add corn, potatoes, sausage, onions and Cajun seasoning blend. Sauté for an additional 4 minutes.
  4. Serve in skillet.
  5. Makes 4 servings (about 1 1/2 cups each).
