Have plenty zucchini from garden here in Australia as it is summer. I also have left over rice in fridge so will make this recipe without adding rice and just serve my rice on the side. Killer Recipe! Makes for a great side dish… You are absolutely one of the best (I'd say within top 10) cooking channels I've found on YouTube! Also you use the good type of Zucchini, the Mediterranean Zucchini which is the best kind to use for these kind of recipes. It's hard to find it where I live but it's always the best.
