I love the artful photography! Whoever impressed you to cook in a red dress (no apron) was a genius. The pop of the red dress against your white kitchen is very aesthetic. Oh and the stew looks great too. I might squeeze 1/2 lemon juice into it when served though.
Just made it -Delicious! My Marash-tsi grandmother used to make it different, with barley. Just bought more perper (purslane) at the farmers market to make this for my 93 yr old mother – she'll love it. Thank you
Mexican here this recipe i learned from my mother but we add Jalapeños (we like it spicy) sometimes we don't for those that can't handle it. i don't chop the onions but leave them long, also tomatoes long like wedges. we make Chuletas de Puerco con Verdolagas Purslane with Pork Chops. that stew i also put on fried eggs. i grow my purslane in my garden. you'll find it growing thru street cracks, alleys, empty lots. Very similar to a dish my father taught me to make. Sauté the onions,tomatoes and your choice of chilis (we use Jalapeño or Serranos) add cominos(cumin) salt, pepper and garlic. Remove from pan and fry cubed pork steaks(not loin) add the bones also. When pork is browned nicely add back the previous ingredients and scrap the pan to loosen up the tasty bits of pork. Add purslane (verdolagas) and simmer till pork is tender approximately 30 minutes. Serve on top of steamed rice. Delicious 😋
I have a question for you, Do you think it's OK to freeze fresh purslane…I have so much of it, and I don't want to lose it, have it go bad. I been growing it organically so I'm thinking of freezing it. Have you froze yours. I eat mine with a bed of jasmine rice or egg noodle and in salad🥗. Thank you
