Aside from the presentation it reminds me a lot of Kibbeh Nayeh.
I have never seen anyone to eat raw meat. It is very unhealthy. You can get stomach cancer. Vegeterian diet is the best diet in the whole world. People should learn to eat less meat.
My grandmother use to make us Chi Kufteh in the summers. Have not had it in years, but still one of my favorite Armenian dishes. Thanks for sharing.

One thing, though: In the old country, they didn't use knives to pulverize the meat. Rather, they pounded it with a heavy wooden mallet on stone until it was essentially mush. And *then* mixed in bulghur and other ingredients.
(This from my boyfriend, who used to watch his grandmother do it in an Armenian village in Lebanon.)

By the way, I tried doing this with lamb, and by hand using two knives to chop it. WHEW! Man did grandma have strong arms! I'm a big guy and still, this took the sweat from me to accomplish.

Ever go to any of the Kebeb shops in North Bergen? Very good when you need a fix of Chi. I have tries pulling into the Armenian store, buying the ingredients and then making this in the car! Now that's how a Armenian foodie's addiction is fed
